TASTING WITH METHOD

  • How to taste and describe spirits using the WSET Level 2 Systematic Approach to Tasting Spirits (SAT), structured, repeatable, and useful every time you pour

FROM RAW MATERIAL TO GLASS

  • The four stages of spirits production: processing the raw material, alcoholic fermentation, distillation, and post-distillation operations
  • How pot stills versus column stills, oak maturation, blending, maceration, and added flavourings each shape the character of a spirit
  • How techniques used at each stage determine the final style of the spirit

THE WORLD'S SPIRIT CATEGORIES

How local production traditions and laws create the distinctive styles within each category:

  • Fruit spirits (including Cognac and brandies)
  • Whisky/Whiskey

Course Details

Course Delivery

The WSET Level 2 Award in Spirits requires a minimum of 26 hours of study time, including 14 hours of tuition with a WSET Approved Programme Provider (classroom or online), plus personal study and revision time.

Assessment

This qualification is assessed by a single closed-book exam of 50 multiple-choice questions.

This qualification is regulated by Ofqual and is trusted by bars, hotels, spirits companies, and drinks professionals in over 70 countries.

Entry Requirements

There are no formal entry requirements for this qualification. It's open to complete beginners as well as those building on their WSET Level 1 Award in Spirits. You must be of legal drinking age in the country where you attend the course to take part in any tasting sessions, though this is not a barrier to completing the qualification.

What a WSET Level 2 Spirits session looks like

Session 1

Day 1: Production fundamentals and fruit spirits

The four stages of spirits production. Pot stills and column stills. Cognac, Armagnac, Calvados, Pisco, Grappa. Guided tasting of eight to ten spirits.

Session 2

Day 1: Whisky and sugar cane spirits

Bourbon, Scotch, Irish, Japanese, and Canadian whiskies. Rum, cachaca, rhum agricole. Guided tasting of ten to twelve spirits.

Session 3

Day 2: Agave, vodka, and flavoured spirits

Tequila and Mezcal. Vodka. Gin, spiced rum, flavoured vodka, aniseed spirits, amaro, liqueurs. Guided tasting of eight to ten spirits.

Session 4

Day 2: Aromatised wines, cocktails, and revision

Vermouth, quinquina, americano. Cocktail balance and the four families. Full revision. Guided tasting of four to six spirits plus vermouths.

Session 5

Examination

50 multiple-choice questions. 60 minutes. Closed book. Pass mark 55 per cent. Results issued by WSET London within five to six weeks.

Sovna Puri is India's leading WSET Certified Educator and an Approved Programme Provider with the Wine and Spirit Education Trust, London. She holds the WSET Level 4 Diploma in Wines and Spirits and was recognised in the WSET Future 50.
